Chioggia Beets, which are delightfully striped when you cut into them are sometimes called Candy Cane beets. They can be prepared exactly as you would use any other beet variety and have a subtly sweet earthy flavor.
Note that sometimes raw beets can make the inside of your mouth and throat taste unpleasantly metallic. If using these raw, we suggest grating them or slicing very thin and dressing or soaking with lemon juice, vinegar or some kind of acid to avoid this sensation. When in doubt...cook em' up!
