Purslane is a powerhouse of nutrition and has a long history of cultivation, dating back to ancient Egypt! It is one of the only plants to be packed with Omega-3 fatty acids but aside from that , it also is full of Vitamins A, C, Potassium, Magnesium, Manganese, Iron and Calcium as well as small amounts of other vitamins and nutrients! Calorie for calorie, it is one of the most nutrient-dense foods on the planet! That's a lot of heavy lifting for these little leaves. 

It has a nutty, almost flax-like flavor with some hints of tartness.  We love it in salads, on sandwiches (in place of spinach or lettuce), lightly cooked, or made into a sauce (think pesto). It has succulent-like tender leaves and stems and because it is not stringy at all, can be eaten whole- leaves, stems, seeds and flowers.
